Abstract

Due to the impact of the Covid-19 pandemic, people are trying to take preventive measures by increasing their immune system. So far, the community uses red ginger empon-empon by boiling one drink because the decoction does not last long, because the community service team provides education on the processing of traditional herbal medicine drinks, instant immunomodulator powder which can be stored more than 8 hours from manufacture. The method used is the conventional way of crystallization through heating and the addition of granulated sugar. Beginning with the selection of imnumomodulatory materials, wet sorting by cleaning of dirt adhering to the empon-empon, followed by chopping, soaking for 30 minutes, filtering with gauze, separation of starch by letting stand 30 minutes until there is a liquid limit and starch, liquid moderately heated and added granulated sugar, stirring constantly until powder crystals form, powder crystal grider until it becomes instant powder and immediately brews. Evaluate the participants by conducting the pre-test and post-test of the participants. From the results of the pre=test and posttest, it was found that the participants' level of knowledge increased by 58%. Thus the education that has been conveyed by the speakers has been understood by the participants with the lowest pre-test score range of 20 and the highest 90 and while the lowest post-test score is 30 and the highest is 100.
